Community Cooks: Perfectly Shaped Spiced Sugar Cookies

These cookies will hold their shape and perfect for your favorite icing. For Christmas cookies, just remove the pumpkin pie spice. Cookies can be frozen to keep throughout the holiday season.

Recipe by Candace Gould, Executive Director, The Heart Gallery of New Mexico Foundation

Ingredients:

  • 1½ cup unsalted butter (softened)
  • 2 cups sugar
  • 4 eggs
  • ½ teaspoon vanilla extract
  • 5 cups flour (be sure to pack)
  • 1 teaspoon pumpkin pie spice
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Directions:

  • Cream butter and sugar until smooth
  • Add eggs and vanilla extract
  • Add flour, pumpkin pie spice, baking powder, and salt
  • Split dough into two balls, put in refrigerator at least one hour (or overnight)
  • Roll dough to approximately ¼ inch thick.
  • For high altitude in New Mexico, bake at 330 degrees for 10 minutes, until center is baked. Bottom of the cookies should not be brown.

Scammers target PNM customers around Thanksgiving

Scammers target PNM customers around Thanksgiving

PNM is warning its customers throughout New Mexico to be on the lookout for phone scams, especially around Thanksgiving and on the weekends. Scammers are smart and are getting more and more savvy every day to try and convince people they are legitimate. PNM is seeing a surge in scam reports from residential and business customers that scammers are spoofing the PNM name and phone number, pretending to be with PNM, are insisting a past due balance is owed, and are threatening to disconnect electricity unless customers pay, within an hour, with a prepaid gift card or through Zelle in your banking app. Scammers know customers are more likely to have family and friends over during Thanksgiving and rely on electricity to prepare family meals. Scammers tend to target customers by calling in the evenings, during weekends, and holidays when PNM is closed, making it more difficult to verify the scammer's claims and more likely that red flags will just be bypassed. This tactic is intentional.

PNM does not shutoff power over the weekend or on holidays. If you receive a call from someone claiming to be with PNM, claiming you are behind on your bill and rushing you to pay threatening a disconnection, hang-up and verify your current balance yourself by calling PNM at 888-DIAL-PNM (888-342-5766), which is the number printed on your bill. We can tell you if a PNM representative contacted you and weather you are past-due. You may also log into your PNM.com account, or you may text #BAL to PNM for your current balance. Not taking the callers claims for fact and verifying your account balance yourself may prevent you from being a victim of a scam.

Grid Modernization

PNM filed a plan to modernize the electric grid with the New Mexico Public Regulation Commission on October 3. When approved, the grid modernization plan will give you more control over your monthly bill while making our grid more reliable, resilient and secure. A key part of our grid modernization plan is the installation of smart meters, a technology used across the country that gives you, our customers, real-time access to your power usage. By seeing how you are using your electricity, you can adjust your usage to save power and money. Smart meters also mean that outages will be reported automatically allowing us to respond to and restore power outages quicker.

PNM gives back through Day of Service

PNM gives back through Day of Service

Last month, after a two-year pandemic hiatus, hundreds of PNM employees served more than 40 nonprofits with the annual Day of Service event. This yearly volunteer tradition, now in its ninth year, is a way for PNM employees to make a difference by serving nonprofits around the state with much needed hands-on project work. The PNM Community Crew of employee volunteers worked with nonprofits on many different projects in Albuquerque, Santa Fe, Farmington, Silver City, Ruidoso, Deming, Lordsburg, Los Lunas, and Belen. The PNM Community Crew is committed to assisting local organizations and seeing the meaningful impacts that are made, during this special day. PNM has a long history of giving back to the communities we serve year-round, and our Day of Service event is just one of the many ways we continue to do just that.
